Palace Hotel Tokyo is collaborating with DUCASSE Paris, founded by Chef Alain Ducasse, to unveil a brand–new restaurant on its premises. It is slated to launch on November 1, 2019. Palace Hotel Tokyo managing director and general manager Masaru Watanabe says Chef Ducasse has a well-established understanding and appreciation for Japanese cuisine, along with undeniable success in opening destination restaurants.
“Crown play a pivotal role in the introduction of French cuisine to Tokyo when it first opened in 1964 as part of the original Palace Hotel,” Watanabe tells Luxury Travel Advisor. The restaurant was updated in 2012 as part of a property-wide renovation; however, Watanabe adds “There’s no more refining or elevating to be done with Crown now … and it’s now time to do something completely different.” Queue Alain Ducasse.
Palace Hotel Tokyo says the new restaurant called ESTERRE is going to be the first collaboration between a Japanese hotel and the world-renowned chef and restaurateur when it launches at the beginning of November following a redesign by SIMPLICITY, which is the design studio of award-winning Japanese interior designer Shinichiro Ogata.
Chef Ducasse and his team will be managing the new restaurant, where its clients can experience an approach to French cuisine designed to bring out original, natural flavors of ingredients and procure sustainable, organic, local ingredients.
